How are birds flying high above able to distinguish between food and non-food items?

As I sit at the beach week after week, it amazes me that the sea birds can tell when someone is holding a sandwich versus a cell phone and dive down and take the food from someone’s hand, but never attempt to take any non-food items. How do they know the difference?
